Baked Stuffed Squid with Mushroom Sauce

This post is mainly about baked and stuffed squid. Forget about mushroom sauce because I used instant mushroom sauce powder that my hubby bought from somewhere. Actually, this might be the simplest way to stuff squid but I tell you, it was really yummy. The mushroom saucde made it more yummier also.  

Ingredients:
1 large squid (about 750 gm or bigger)
1 large onion, shopped
2 tbsp. ginger strips
salt
pepper
Instant Mushroom sauce

Directions:
1. Wash squid, make several slit on its belly horizontally, enough to insert the spices.
2. Stuff with onion, ginger and pepper.
3. Sprinkle with salt and pepper.
4. Baked in a preheated 250 degrees Celsius oven for 30-45 minutes.
5. Prepare the mushroom sauce.
6. Pour over the baked squid and serve.

Squid with Tomato and Oyster Sauce

As I mentioned in my previous post that we have loads of fresh tomatoes at home and we didn’t able to consume it all no matter how we ate tomato salad daily. So here I am again making some experiments for these tomatoes, take a look:

Ingredients:
500 g squids, sliced into rings
2 cloves garlic
1 medium onion, sliced thinly
1 thumb-sized ginger, crushed
4 ripe tomatoes, minced
1/3 cup oyster sauce
Salt and Pepper powder to taste
3 tbsp. cooking oil

Directions:
1. Saute garlic in hot oil until golden brown, add onions, ginger and tomatoes, sauté until very tender.
2. Add squid slices and stir to mix well, cook for 1 minute over high heat.
3. Add the rest of the ingredients and cook for 3 minutes. Serve with plain white rice.

Squid with Broccoli

 Brocolli is one of my favorite vegetables to add in any seafoods that I cook especially when I am stir-frying, aside from its yummy taste it is very nutritious also. Few weeks ago, I also posted squid with broccoli but that was diffrent from the dish that I am posting now. Here, I did not fried the squid, I boiled it first for few seconds then stir-fried with the rest of the ingredients.

Ingredients:
500 g squid (any variety), sliced into bite-size
1 large head of brocolli, cut into florets
1 cup mushroom (canned or fresh), sliced
1 medium onion, quartered
1/3 cup oyster sauce
1/3 cup broth
1 tbsp. cooking oil
salt and pepper to taste
2 cups water
 

Directions:

1. In a medium pot, bring water to a boil, add the sliced squid and boil for 20 seconds. Drain and set aside.

2. Heat oil in pan, stir fry the cooked squids, brocolli, mushroom and onions for 1 minute.

3. Add broth, salt and pepper, cook for another 1 minute or until brocolli are done.

4. Stir in oyster sauce, cook for few seconds.

5. Remove from heat and serve.

Fried Squid with Baby Corn and Broccoli

Squid is one of our regular seafoods dish here in Kuwait, my father who arrived here more than a week ago surprised when he saw the squid I served last night, he cannot believed that there is squid here.  I knew he likes fried squid so much that’s why I cooked this recipe last nigth, in as much, this is my hubby’s favorite also.  I posted fried squid already in this blog before but this one is quite different yet simple and easy to prepare. Crispier also!

Ingredients:

500 g medium squids

Salt

Black pepper

2 cups baby corn, sliced

1 medium head of broccoli, cut into florets

1 medium onion, quartered

Fish sauce

1/3 cup cooking oil 

Directions:

1. Make some slits in the squids belly horizontally.  Sprinkle with little amount of salt and black pepper.

2. Heat cooking oil in a frying pan, fry the squids in a batch. Cover the pan, fry until golden brown.  Turn to fry the other side. Drain on paper towels. Repeat the procedure until all squids are fried.

3. Cut the fried squids about ¼ inch horizontally. Set aside.

4. Take 1 tbsp. from the used oil, heat in another pan, stir fry the baby corn, broccoli and onions. Sprinkle with little amount of fish sauce. Fry for 1-2 minutes.

5. Transfer to a platter, add the fried squids on top. Serve with your favorite dipping sauce.

Soup and Stir Fried Squid

My mother’s favorite way to cook large squids, she sauteed the squids first with large amount of water and some spices, then she took out the squid’s meat from the broth to stir fry it with other ingredients. I like this style of cooking and sometimes I did it also with beef and chicken.

Ingredients:
500 g squid, large variety, sliced thinly
1 pinch of turmeric powder

For the broth:
1 medium onion, sliced thinly
1 thumb-sized ginger, crushed
2 cloves garlic, crushed
1 medium ripe tomato, sliced thinly
1 tsp. whole peppercorn
1 long green pepper
Fish sauce
Water
salt and pepper to taste
1/2 tsp. sugar
1 tbsp. cooking oil

For Stir Frying:
2 cloves garlic, crushed
1 medium onion
1/2 cup mixed vegetables (carrots and green peas)
2/3 cup corn kernels, drained
Light soy sauce to taste
3 tbsp. oyster sauce
1/2 tsp. sugar
black pepper powder to taste
2 tbsp. cooking oil
1 tsp. sesame seed oil

Directions:
For the Broth
1. Mix turmeric powder and squid.
2. Heat oil in a pot, saute garlic until slightly brown, then add onions, ginger and tomatoes, saute until tender.
3. Add water and peppercorns, let it boil. (the secret of boiling water first is to soften the squid)
4. When the water boils, add squid and the rest of broth ingredients. Cook for 3 minutes.
5. Take out the squids’ meat from the broth.

To Stir Fry:
1. Heat oil in a pan, saute garlic until slightly brown, then add onions, stir.
2. Stir in the squids, mixed vegetables and corn kernels.
3. Season with light soy sauce, black pepper powder and sugar. Add oyster sauce and cook for few seconds.
4. Turn off heat, stir in the sesame seed oil. Serve.

Squid Adobo

There are many variations of squid adobo, however this is my favorite one.

 

Ingredients:
500 g squid, cleaned and sliced into rings
1 cup water
1/3 cup vinegar
1 tsp. whole peppercorns
1/2 tsp. salt
1 medium onion, sliced thinly
3 cloves garlic, crushed
1 tbsp. grated ginger
1 ripe tomato, sliced thinly
1 tbsp. light soy sauce
2 tbsp. oyster sauce
1 stalk green onion,cut into 1 inch length
3 tbsp. cooking oil
1 stp. sesame oil (optional)

Directions:
1. In a medium pot, bring water to a boil along with the vinegar, squid and salt until the squid is cooked. Drain and set aside.
2. In a separate pan, saute garlic in hot oil until slightly brown. Add onions, ginger and tomato, saute until the tomatoes are tender.
3. Add the squid and the rest of the ingredients except green onion and sesame oil. Stir to mix well and cook for 1 minute.
4. Add green onions. Stir for few seconds. Turn off heat. Stir in the sesame oil. Serve hot

Squid with String Beans

This is one of my simpliest recipe to cook squid with vegetables. Very easy and simple.

Ingredients:
500 g medium squid, sliced into rings
10 pcs. string beans, cut into 2 inches length
1 medium carrot, sliced into strips
1 medium onion, sliced thinly
1 tbsp. grated ginger
1 ripe tomato,sliced thinly
1/3 tsp. black pepper powder
2/3 cup water
1 tbsp. light soy sauce
1 tbsp. dark soy sauce
1/2 tsp. sugar
salt and pepper to taste
3 tbsp. cooking oil
1 tsp. sesame oil

Directions:
1. Heat cooking oil in a pan, saute onion,ginger and tomatoes for 3 minutes or until tender.
2. Add squid rings, string beans and carrots, stir for 1 minute then add water and the rest of the ingredients except sesame oil. Adjust the seasoning according to your taste. Simmer until the vegetables are done.
3. When the vegetables are done, turn off heat and stir in the sesame oil. Serve.
