Shrimp and Vegetable Salad

if you like red cabbage, then this salad is for you 😀

Ingredients:
Red cabbage, shredded
Carrots, shredded
Lettuce Romaine, cut into small sizes
Tomatoes, thinly sliced
Boiled shrimps, peeled
3 tbsp. lemon juice
French Dressing

Directions:
1. Toss all vegetables and shrimps in a salad bowl.
2. Add lemon juice and French dressing.
3. Mix together.
4. Refrigerate before serving if desired.

Vegetable Salad with French Dressing

It’s summer time! For me, summer is the season for salads and juice while winter is the season for soup and hot tea. It’s almost 50 degrees here in Kuwait nowadays, nighttimes are very short, our bellies esp. me were getting bigger and bigger since we drink lots of iced water every now and then. lol 😀

I craved for vegetable salad few days ago so I combined all the veggies I like inside our fridge, I dressed it with French salad dressing and lemon juice, the result was very cool! hehe 😀

Ingredients:
Cucumber, thinly sliced
Lettuce romaine, sliced into strips
Red cabbage, shredded
Carrots, shredded
tomato, thinly sliced
lemon juice
French salad dressing
salt and pepper if desired

Directions:
1. Combine all ingredients in a bowl.
2. Chill for few minutes before serving.

Shredded Cucumber Salad

This is one of my simplest cucumber salad. Good to serve with broiled bangus or any grilled seafoods.

Ingredients:
3 cups shredded cucumber
1 stalk green onion, chopped
1 tomato, thinly sliced
1 tbsp. olive oil
salt and pepper to taste

Directions:
1. Combine all ingredients in a salad bowl.
2. Mix well and serve.

Easy Carrot Salad

This is one of my simplest and healthiest carrot salad ever. I usually served it as a side dish to any fried or grilled meat and seafoods.  So yummy…I’m addicted to carrots!

Ingredients:
1 large carrot, sliced into tiny strips
1 tbsp. salt
1 small onion, chopped
Juice of 1 lemon

Direction:
1. Sprinkle salt over the carrots, squeeze it with your hand 2-3 times. Rinse with cold water. Drain.
2. Add chopped onion and lemon juice. Mix well. Chill for at least 20 minutes before serving.

Strawberry Salad

It’s winter season again in Kuwait, so it’s also my favorite fruit’s season…the strawberry! Our favorite way to eat this fruit is just mere adding it with cream and condensed milk but sometimes I added it also to our traditional fruit salad to have more exciting taste! lol 🙂 The picture below was the one I prepared last Eid al Adha holidays, it was so yummy!  I want to make it again this weekend but the problem is I cannot find any condensed milk nowadays here in Kuwait.  I think, we already checked amost all the stores even the smallest one looking for condensed milk but we did not able to find one.  I don’t know why… By the way, the amount of ingredients listed below are just optional since you can adjust it according to your preference.

Ingredients:
2 cups slices of fresh strawberries
1 can 220 g  fruit cocktail, drained
2 cups red and green nata de coco
1/2 cup raisins
2/3 cup whole corn kernel
1 can 170 g all-purpose cream
1/2 cup condensed milk

Directions:
1. Mix all ingredients together in a salad bowl.
2. Refrigerate for at least 30 minutes before serving.

Kamote Tops Salad

Kamote tops is one of my hubby’s favorite leafy vegetables.  Whenever he saw this veggie in the market he will not hesitate to buy it no matter how much the price would be.  This is very cheap in Philippines but here in Kuwait, one bundle will cost 450 fills which is equivalent to Php 75.00 or $ 1.60. We cooked it in many diffrent ways like sauteeing it with meat or seafoods (I rgeret I did not able to post one) , adding it on Sinigang soup, sometimes mixed with other vegetables, however my favorite is making it into salad of course and this is how I made it:

Ingredients:
1 medium bunch of fresh kamote tops, trimmed
5 cups water
2 medium tomatoes, sliced
1 medium onion, minced
1 thumb-sized ginger, minced
Juice of 1 lemon
1 tbsp. olive oil
3 tbsp. soy sauce

Directions:
1. In a small bowl, combine onion, ginger, lemon juice, olive oil and soy sauce altogether.
2. Heat water in a pot, bring to a boil, add kamote tops and blanch for 30 seconds. Drain. Transfer to a serving dish.
3. Pour the lemon juice mixture over the blanched kamote tops, add tomato slices and mix well. Serve.

Cucumber with Coconut Milk

One of our favorite salad at home especially when we had grilled milkfish or any fried fish.

 

Ingredients:
5 medium cucumber, sliced into thin strips
1 medium tomato, thinly sliced
1 stalk green onions, chopped
1 cup coconut milk
salt and pepper to taste

Directions:
1. Combine all ingredients in a bowl.
2. Mix well, chill for few minutes before serving if desired.
