Vegetable Fried Rice 3

This fried rice was inspired by the fried rice that I bought for my son Azhfaar from Popeyes Restaurantā€™s booth few weeks ago. We watched the Kapuso all-stars basketball game at the Adeliyah gym few weeks ago and our son was with us, he was hungry at the middle of the gym so I bought something for him to eat, a fried chicken and vegetable fried rice, the vegetable used were bell peppers and eggplants only and it was really yummy, I let my hubby tasted it and he said he never thought that eggplant was good for fried rice! lol šŸ™‚

We had eggplant the other day and some cold rice also, so I made this recipe.

Ingredients:
2 cups cold cooked rice
2 cloves garlic, minced
1 medium onion, minced
1 medium eggplant, chopped
Ā½ cup chopped carrots
Ā½ cup chopped green bell pepper
2 tbsp. light soy sauce
2 tbsp. dark soy sauce
pepper to taste
2 tbsp. cooking oil

Directions:
1. Heat oil in a wok, saute garlic and onion until aromatic, add eggplant, carrots and bell pepper, season with light soy sauce. Cook until vegetables are tender.
2. Add rice and dark soy sauce. Cook and stir for 2-3 minutes or until rice grains are heated through.
3. Add pepper if desired. Serve.

American Fried Rice

As you read in the post title, it’s an American fried rice but actually with southeast asian origin. According to wiki, American fried rice is a Thai fried rice dish with “American” side ingredients like fried chicken, ham, hot dogs, raisins, ketchup, and croutons.

Actually, this recipe is very simple, it’s almost the same with any fried rice you had known. I served it on breakfast time and my son Azhfaar loved it so much.

Ingredients:
2 cups cold cooked rice
1 cloves garlic, minced
1 onion, minced
3 tbsp. tomato ketchup
2 tbsp. soy sauce
2 tbsp. raisins, soaked in warm water for 1-2 minutes
3 tbsp. butter
Crispy fried hotdogs
Fried Eggs, sunny side up style

Directions:
1. Heat butter in a wok then saute garlic until slightly brown. Add onions and saute until transparent.
2. Add rice, ketchup and soy sauce. Stir and cook until all rice grains are heated through.
3. Add raisins and cook for 1 minute.
4. Transfer to a serving plate and serve with cripsy fried hotdod and sunny side upĀ egg.

Tom Yum Fried Rice

This recipe was inspired by my favorite Tom Yum soup. I used the basicĀ ingredientsĀ ofĀ that soup to make into fried rice, the result was amazing. If you love Thai foods, then I recommend to try this recipe.

Ingredients:
3 cups cold cooked rice
8-10 medium shrimps, peeled
2 cloves garlic
2 stalks green onions, cut into 1 inch length separate the white parts
1 stalk lemon grass, cut into 1 inch diagonally
2 thumb-sized galangal root, crushed then thinly sliced
2 kaffir lime leaves
1 tsp. red pepper flakes
1 Ā½ tbsp. fish sauce
1 piece tom yum cube (optional)
salt to taste
lemon wedges (optional)
2 tbsp. cooking oil

Directions:
1. Heat oil in a wok, saute garlic for few seconds, then add white part of the green onion, lemon grass, galangal root and kaffir lime leaves. Stir to mix well and cook for 30 seconds.
2. Add shrimps, red pepper flakes, fish sauce and tom yum cube. Cook until shrimps turns into pink or orange.
3. Add cold rice, cook until rice grains are heated through. Season with salt or add more fish sauce. Add green onions, mix well.
4. Serve with lemon wedges if desired.

Turkey Fried Rice

We did not able to eat all the Roast Turkey that I cooked few days ago so I made some of the remaining meat to add in my fried rice. What made this recipe different from my previous fried rice recipes was the way I cooked the turkey meat, I made it a little bit crispy! Actually I cooked this 3 days ago but I had no time to post it here. šŸ˜¦

Ingredients:
3 cups cold cooked rice
1 cup cooked turkey breast flakes
2 cloves garlic, minced
1 onion, minced
1 medium carrot, cut into small cubes
2. tbsp. soy sauce
2 tbsp. oyster sauce
1 stalk green onion, chopped
salt and pepper to taste
3 tbsp. cooking oil

Directions:

1. Heat oil in a wok, saute garlic until slightly brown. Add minced onions and saute for few seconds.
2. Add turkey flakes, carrot cubes and soy sauce. Stir fry for 7-8 minutes or until turkey flakes turn almost crispy, add oyster sauce and cook for 30 seconds. Take half of the mixture, place it in a separate plate and set aside.
3. Add cold rice, cook until all rice grains are heated through or mix well with the other ingreidnets. Season with salt and pepper.
4. Add half of the chopped green onions, stir to mix well. Cook for 1 minute.
5. Transfer to a serving plate, garnish with the set-aside stir fried turkey flakes and the remaining green onions.

Beef Fried Rice 2

One of my way to post some recipes hereĀ is becauce of my blog stats, when I checked it the other day some words used to find this blog are beef fried rice but my previous post for that dish was quite different, this one taste yummier. lol šŸ˜€

Ingredients:
3 cups cold cooked rice
2 cloves garlic, minced
1 medium onion, chopped
2/3 cup ground beef
2 tbsp. fish sauce
2/3 cup mixed vegetables (carrots, green peas and corn kernels)
1 small green bell pepper, thinly sliced
1 tsp. sugar
Pepper, to taste
2 tbsp. oyster sauce
2 tbsp. cooking oil

Directions:
1. Heat oil in a wok, sautƩ garlic and onions for about 1 minute. Add ground beef. Stir well. Season with fish sauce and cook until beef are done.

2. Add mixed vegetables and bell pepper. Cook for 30 seconds, then add rice, stir to make sure that each grain of rice is separated, then season with sugar and pepper. Cook for 3-4 minutes, stirring constantly.

3. Turn off heat, add oyster sauce, stir well before serving.

Basil Shrimp Rice

I bought some small frozen peeled shrimps few days ago at the Carrefour Hypermarket, they offered the package for buy 1 take 1 so I decided to buy though I was not really interested in frozen shrimps, I might be able to use it for the vegetables. However, it seemed that my first intention was not realized since I first used it in my Shrimp Spaghetti and now I will use it in this rice. Never mind, I still have some in the fridge, lol. This rice is quite different from my previous shrimp fried rice, this is just a simple one yet yummy and aromatic as well. The combination of garlic, basil and olive oil’s aroma made it really tempting to eat.

Ingredients:
3 cups cold cooked rice
200 g peeled small shrimps
2 cloves garlic, minced
1 medium onion, minced
1/3 tsp. dried basil leaves
1 pinch black pepper powder
1/3 tsp. salt
3 tbsp. olive oil
1 stalk green onion, chopped

Directions:
1. Heat olive oil in a wok. Saute garlic and onions until aromatic, add shrimps. Stir and cook until shrimps’ color turn orange.
2. Add rice, stir to mix well and cook for 3-4 minutes.
3. Add the remaining ingredients, stir and cook for 1 minute. Turn off heat and serve.

Prawn Fried Rice

I cooked this dish when I was in Philippines during our vacation last October. I really missed eating prawns from my parents fishpond, so fresh and yummy thatā€™s why we almost ate prawns daily, I cooked it in many different ways like adobo, grilled, boiled, fried, tempura, stew, sinigang, etc. and I really regret why I did not able to take pictures on it. I think it was just because blogging was out of my mind during those yummy moments. I was only lucky to take picture of this since the camera was near me when I served it on the dining table. The recipe is so simple and basic, no especial ingredients were added. I just post it here to have some remembrance of our very special days during our vacation.

Ingredients:
3 cups, cooked cold rice
1 egg, beaten
25 pcs. medium prawns (size 3) shelled
2 cloves garlic, minced
2 cups shredded cabbage
Soy sauce to taste
2 tbsp. oyster sauce
Chopped green onions
2 tbsp. cooking oil
Cooking spray

Directions:
1. Heat and grease the wok with cooking spray, cooked the egg until done. Slice and set aside.
2. Heat oil on the same wok, saute garlic for few seconds, add prawns. Stir and cook until color changes into orange.
3. Add all the sauces and cabbage. Cook for 1 minute, then add rice. Stir until all rice grains are heated through.
4. Turn off heat, add the green onions. Mix well. Transfer to a dish and serve.
