Shrimp Biryani

Long grain rice became part of our regular meals already specially every weekends, I always cooked it on weekends since it requires longer time to cook than jasmine rice. I cooked various recipes already, some were posted on this blog. One of my favorite way to cook is Biryani, however, as I mentioned in my previous post that I always omit some of the original biryani spices because it is not suitable for out taste. I just want to cook something everyone of my family will enjoy to eat.

The recipe below is on of my favorite way to cook shrimp biryani.

Ingredients:
2 cups long grain or basmati rice
500 g shrimps, peeled
3 cloves garlic, minced
2 large onions, chopped
2 tbsp. chopped ginger
2 large tomatoes, chopped
1 tsp. curry paste
1 tbsp. tomato paste
¼ tsp. black pepper powder
¼ tsp. dried coriander leaves
2 tbsp. light soy sauce (optional)
¼ tsp. turmeric powder
1 green bell pepper, sliced into strips
1 large carrot, cube
¼ cup raisins
4 tbsp. olive oil
Cooking Spray (optional)

Directions:

1. Wash then soak rice with enough cold water for 10 minutes.
2. Boil enough water or about 10 cups in a cooking pot. Add salt and 2 tbsp. oil. Drain rice and put in boiling water. Boil for 6-7 minutes or until rice are slightly tender. (Pease note that the length of the cooking time for the rice may vary depending upon the kind of rice you used.) Drain and set aside.
3. In a separate pot, heat olive oil. Saute garlic until slightly brown, then add onions, ginger and tomatoes. Stir and saute until tender.
4. Add shrimps, curry paste, tomato paste, coriander leaves, soy sauce and turmeric powder. Cook until shrimps are done.
5. Add bell pepper and carrots, cook for 1 minute.
6. Heat another cooking pot, grease the bottom with cooking spray. Place the 1/3 part of the ccoked rice, then add the half of shrimp mixture, then another 1/3 of the rice, add the remaining half of the shrimps, then the remaining rice. Rice should be on top.
7. Put the raisins on top of rice.
8. Cover the pot and cook for 15 minutes over very low heat.
9. Transfer to a serving dish and serve.

Plain Yellow Rice

This is one of my simplest way to cook plain yellow rice. I just used my imagination and here’s the outcome. 🙂

Ingredients:
3 cups long grain or basmati rice
2 cloves garlic, minced
1 large onions, chopped
¼ cup butter
½ tsp. turmeric powder
salt
Water

Directions:

1. Wash then soak rice in cold water for 10 minutes. Drain
2. Boil enough water or about 10 cups in a cooking pot. Add salt and 2 tbsp. oil.
3. Add rice and boil for 6-7 minutes. Drain.
4. Heat butter in a cooking pot, saute garlic and onions for few seconds. Add turmeric powder and rice. Mix gently. Be careful not to break the rice grains.
5. Cover the pot, cook over very low heat for 15 minutes. Nice to serve with chicken barbeque and vegetable salad.

Vegetable Fried Rice 3

This fried rice was inspired by the fried rice that I bought for my son Azhfaar from Popeyes Restaurant’s booth few weeks ago. We watched the Kapuso all-stars basketball game at the Adeliyah gym few weeks ago and our son was with us, he was hungry at the middle of the gym so I bought something for him to eat, a fried chicken and vegetable fried rice, the vegetable used were bell peppers and eggplants only and it was really yummy, I let my hubby tasted it and he said he never thought that eggplant was good for fried rice! lol 🙂

We had eggplant the other day and some cold rice also, so I made this recipe.

Ingredients:
2 cups cold cooked rice
2 cloves garlic, minced
1 medium onion, minced
1 medium eggplant, chopped
½ cup chopped carrots
½ cup chopped green bell pepper
2 tbsp. light soy sauce
2 tbsp. dark soy sauce
pepper to taste
2 tbsp. cooking oil

Directions:
1. Heat oil in a wok, saute garlic and onion until aromatic, add eggplant, carrots and bell pepper, season with light soy sauce. Cook until vegetables are tender.
2. Add rice and dark soy sauce. Cook and stir for 2-3 minutes or until rice grains are heated through.
3. Add pepper if desired. Serve.

American Fried Rice

As you read in the post title, it’s an American fried rice but actually with southeast asian origin. According to wiki, American fried rice is a Thai fried rice dish with “American” side ingredients like fried chicken, ham, hot dogs, raisins, ketchup, and croutons.

Actually, this recipe is very simple, it’s almost the same with any fried rice you had known. I served it on breakfast time and my son Azhfaar loved it so much.

Ingredients:
2 cups cold cooked rice
1 cloves garlic, minced
1 onion, minced
3 tbsp. tomato ketchup
2 tbsp. soy sauce
2 tbsp. raisins, soaked in warm water for 1-2 minutes
3 tbsp. butter
Crispy fried hotdogs
Fried Eggs, sunny side up style

Directions:
1. Heat butter in a wok then saute garlic until slightly brown. Add onions and saute until transparent.
2. Add rice, ketchup and soy sauce. Stir and cook until all rice grains are heated through.
3. Add raisins and cook for 1 minute.
4. Transfer to a serving plate and serve with cripsy fried hotdod and sunny side up egg.

Nasi Goreng

Nasi Goreng is an Indonesian version of Fried Fried, Nasi means rice and Goreng means fried. Actually it is almost similar to a Chinese fried rice but the only slight difference is the sweet soy sauce which served as the basic ingredient for nasi goring. Being a family of fried rice lovers, this triggers me again to try the Indonesian version, I browsed online a good recipe for nasi goreng, many versions are available so I tried to incorporate it my recipe to make my own version also. Most recipes calls for large amount of oil but I reduced it for health reason.

Ingredients:
2 cups cold cooked rice
1 egg, beaten
2 cloves garlic, minced
1 medium onion, thinly sliced
¼ tsp. coriander powder
½ tsp. red pepper flakes
1 tsp. shrimp paste
15 pcs. medium shrimps, peeled
2 tbsp. sweet soy sauce (kecap manis)
1 tbsp. soy sauce
1 stalk green onion, chopped or cut into desired length
3 tbsp. cooking oil
2 tbsp. roasted onion slices
Cucumber, thinly sliced (optional)
Tomatoes, thinly sliced (optional)
Cooking spray

Directions:
1. Grease wok with cooking spray, cook beaten egg into omelet. Turn once to cook the other side. Transfer to a platter, roll and slice thinly. Set aside.
2. Heat oil in a wok, saute garlic and onion until aromatic. Add coriander powder, pepper and shrimp paste. Cook for few seconds, then add shrimps. Stir and cook until shrimps are done.
3. Add sweet soy sauce, stir well.
4. Add rice, stir and cook until all rice grains are heated through. Add soy sauce and green onions. Cook for 1 minute.
5. Transfer to a serving plate and garnish with cooked egg, roasted onion, cucumber and tomatoes. Serve.

Tom Yum Fried Rice

This recipe was inspired by my favorite Tom Yum soup. I used the basic ingredients of that soup to make into fried rice, the result was amazing. If you love Thai foods, then I recommend to try this recipe.

Ingredients:
3 cups cold cooked rice
8-10 medium shrimps, peeled
2 cloves garlic
2 stalks green onions, cut into 1 inch length separate the white parts
1 stalk lemon grass, cut into 1 inch diagonally
2 thumb-sized galangal root, crushed then thinly sliced
2 kaffir lime leaves
1 tsp. red pepper flakes
1 ½ tbsp. fish sauce
1 piece tom yum cube (optional)
salt to taste
lemon wedges (optional)
2 tbsp. cooking oil

Directions:
1. Heat oil in a wok, saute garlic for few seconds, then add white part of the green onion, lemon grass, galangal root and kaffir lime leaves. Stir to mix well and cook for 30 seconds.
2. Add shrimps, red pepper flakes, fish sauce and tom yum cube. Cook until shrimps turns into pink or orange.
3. Add cold rice, cook until rice grains are heated through. Season with salt or add more fish sauce. Add green onions, mix well.
4. Serve with lemon wedges if desired.

Turkey Fried Rice

We did not able to eat all the Roast Turkey that I cooked few days ago so I made some of the remaining meat to add in my fried rice. What made this recipe different from my previous fried rice recipes was the way I cooked the turkey meat, I made it a little bit crispy! Actually I cooked this 3 days ago but I had no time to post it here. 😦

Ingredients:
3 cups cold cooked rice
1 cup cooked turkey breast flakes
2 cloves garlic, minced
1 onion, minced
1 medium carrot, cut into small cubes
2. tbsp. soy sauce
2 tbsp. oyster sauce
1 stalk green onion, chopped
salt and pepper to taste
3 tbsp. cooking oil

Directions:

1. Heat oil in a wok, saute garlic until slightly brown. Add minced onions and saute for few seconds.
2. Add turkey flakes, carrot cubes and soy sauce. Stir fry for 7-8 minutes or until turkey flakes turn almost crispy, add oyster sauce and cook for 30 seconds. Take half of the mixture, place it in a separate plate and set aside.
3. Add cold rice, cook until all rice grains are heated through or mix well with the other ingreidnets. Season with salt and pepper.
4. Add half of the chopped green onions, stir to mix well. Cook for 1 minute.
5. Transfer to a serving plate, garnish with the set-aside stir fried turkey flakes and the remaining green onions.
