American Fried Rice

As you read in the post title, it’s an American fried rice but actually with southeast asian origin. According to wiki, American fried rice is a Thai fried rice dish with “American” side ingredients like fried chicken, ham, hot dogs, raisins, ketchup, and croutons.

Actually, this recipe is very simple, it’s almost the same with any fried rice you had known. I served it on breakfast time and my son Azhfaar loved it so much.

Ingredients:
2 cups cold cooked rice
1 cloves garlic, minced
1 onion, minced
3 tbsp. tomato ketchup
2 tbsp. soy sauce
2 tbsp. raisins, soaked in warm water for 1-2 minutes
3 tbsp. butter
Crispy fried hotdogs
Fried Eggs, sunny side up style

Directions:
1. Heat butter in a wok then saute garlic until slightly brown. Add onions and saute until transparent.
2. Add rice, ketchup and soy sauce. Stir and cook until all rice grains are heated through.
3. Add raisins and cook for 1 minute.
4. Transfer to a serving plate and serve with cripsy fried hotdod and sunny side up egg.

Creamy Cheese Sandwich

I usually prepared crispy sandwiches but this time I made it soft but not soggy of course.  This ideal for breakfast esp. when you re running out of time. Very simple and easy to prepare.

Ingredients:
6 pcs. sliced bread
2 cheddar cheese singles
cream cheese
tomato, thinly sliced
lettuce

Directions:
1. Spread enough amount of cream cheese over the 2 slice breads, add tomato slices over the cream cheese. Cover each bread with another slice.
2. Place each of the singles over the second layer, top with lettuce. Cover the lettuce with another slice bread.
3. Microwave for 10 seconds enough to soften the bread but remains the lettuce crispy.
4. Cut the sandwiches into 2 diagonally for easy biting.

Egg Sandwich

This is just a simple recipe and I think everybody knows how to do it, it is very common breakfast also. There is no special ingredients that I added on it, I just post it here because I just want to share my own way of making egg sandwich.

Ingredients:
3 eggs, beaten
2 medium tomatoes, chopped
1 medium onion, chopped
1/4 cup fresh milk
1/4 cup grated cheddar cheese
3 pinch salt
1/4 tsp. black pepper powder
butter cooking spray
cream cheese spread
6 slices of bread

Directions:
1. Combine the first 7 ingredients in a bowl. Blend well.
2. Over low medium heat, grease pan with butter cooking spray.
3. Pour half of the egg mixture on it and swirl the pan around to make sure that the eggs spreads evenly around it. Cook over low heat. Turn over and cook the other side. Remove from pan and set aside. Cook the other half following the same procedure.
4. Spread cream cheese over one side of each bread. Put enough egg over the creamed bread and cover with another slice.
5. Bake in a preheated 250 degree C oven for 5 minutes or until slightly brown.
6. Slice sandwich into 2 diagonally for easy biting. Serve.

Tuna Cucumber Sandwich

Here’s my another recipe for tuna sandwich. Our favorite way to make it before were adding it with pineapple slices or making it into French toast tuna sandwich which my hubby’s favorite request for breakfast. He requested it the other day but we ran out of mayonnaise at home and no one dares to go out during this chilly moments just to buy something which was not really important at all, lol :D. He really likes tuna, any recipe will turn perfect for him when it is the main ingredient. Since my ingredients for French toast Tuna Sandwich was not complete, I made another recipe which I think can compensate for his cravings for it, so this is it. The result was so good that he even requested me to do it again, lol 🙂 . The sliced bread below looks almost burnt since I did not able to take it out immediately from the oven, I was in the living room that time.

Ingredients:
6 pcs. sliced bread
1 can 90 g Tuna flakes, drained
1 medium cucumber, shredded
1 medium tomato, thinly sliced
Cream cheese

Directions:
1. In a small bowl, mix tuna and cucumber together.
2. Spread generous amount of cream cheese on one side of each bread.
3. Divide tuna mixture into 3 parts, spread one part over the bread with cream cheese on it. Add tomato slices over the tuna mixture. Cover with another slice, cream cheese facing downward. Repeat this procedure for the remaining 4 slices.
4. Bake the sandwiches in a preheated 250 degrees C oven for 5 minutes or until slightly brown.
5. Cut the sandwiches into 2 diagonally for easy biting.

Corn Muffin

Muffin is one of our regular breakfast at home, one of the reason why I always made it is because our son Azhfaar loves it so much. He used to call it cake but now he called it muffin already. While I’m typing this he saw the picture and he’s asking me if we still have it. 🙂

The first corn muffin that I posted here was different since I mixed it with pineapple, that’s why I posted this since when I checked my blog statistic few days ago, one of the search engine terms used to find this blog was corn muffin. So here is it.

Ingredients:
1/4 tsp. salt
3 tsp. baking powder
2 ½ cup all-purpose flour
1 egg, beaten
½ cup sugar
½ cup melted butter
½ cup milk
1 can 240 g cream style corn
Butter cooking spray

Directions:
1. Sift together salt, baking powder and flour. Set aside
2.. In a medium bowl, combine egg, sugar, butter and milk. Mix well.
3. Add the flour mixture, mix together but avoid over stirring. Add cream corn, stir. The mixture should be lumpy.
4. Grease each muffin pans with the cooking spray.
5. Fill the greased pans with the batter about half full.
6. Bake in a preheated 180 degrees C oven for 30 minutes or until done.

Savoury Eggs on Buns

This is just one of our simple recipe for breakfast, my hubby is not a big fan of chicken franks while me and our son were crazy of it especially during breakfast time.
To trick him, I added his favorite egg omelet with chicken franks and sandwich it with buns full of cream cheese, thanks…I was successful, he ate it!

Ingredients:
3 eggs, beaten
2 tbsp. chopped parsley
3 pinch salt
¼ tsp. black pepper powder
1 onion, minced
1 ripe tomato, chopped
1 chicken franks, thinly sliced
2 tbs. melted butter
Cream cheese
Any Bread

Directions:
1. Combine beaten egg, parsley, salt and black pepper powder in a bowl. Set aside.
2. Heat butter in a medium non-stick frying pan. Saute onion and tomatoes for few seconds, then add chicken franks, stir-fry for 1 minute. Spread the mixture to the pan.
3. Add egg mixture to the pan, swirl to make sure that all bottoms of the pan will be covered by the egg. Lower the heat and cook until eggs are firm and easy to turn over.
4. Turn over the egg to cook the other side. Cook for few seconds. Turn off heat.
5. Transfer the egg to a plate, cut into 4 slices.
6. Spread each side of bread with generous amount of cream cheese before sandwiching the egg! Have a nice breakfast!

Tocino, Garlic rice and Sunny side up Egg (Tocilog)

I cooked chicken tocino last week for our lunch and my hubby commented why I did not served it on breakfast, of course I knew that this can be eaten for any meal and it is great for breakfast but I always have no enough time to cook early in the morning during weekdays, I always reserved my breakfast cooking skills during weekends. So I told him that I will make tocilog someday if I have time. In Philippines, Tocino is usually served with Garlic rice (sinangag) and fried egg, Filipinos used to call this combination as Tocilog and it is best when eaten during breakfast time. The tocino recipe written below is just a guide, you can adjust the amount of salt or sugar depending upon your taste, but make sure to use right proportion, use more amount of sugar than salt.

Ingredients:
2 pcs. egg (fried in sunny side up style)

For the garlic rice
2 cups cold cooked rice
4 cloves of garlic, minced
1 small onion, minced
2 tbsp. cooking oil
salt to taste

For Tocino
1 chicken breast, sliced into thin squares (1 inch each side)
1 ½ tbsp. rock salt
3 tbsp. sugar
1 tsp. vinegar (optional)
¼ cup water
1-2 tbsp. oil

Directions:
For Garlic Rice
1. Heat the oil in wok.
2. Add the garlic and stir until brown. Add in the onions, saute for few seconds.
3. Add the rice, stirring to blend well with the rest of the ingredients.
4. Season with salt. Cook until all the rice are heated through.

For Tocino
1. Mix salt and sugar together.
2. Press both sides of chicken slices into the mixture.
3. Arrange the pressed chicken into a bowl, cover and refrigerate for at least whole night.
4. Boil the tocino, water and vinegar until almost dry.
5. Add the cooking oil and cook until it just caramelizes slightly on both sides.
6. Serve with fried egg and garlic rice.
