Ginger Beef

 I was out of blogging world for few months because of many reasons.  We went on vacation for  the last 2 months so blogging was out of my mind during those days.  Sometimes I was also online in Philippines but just checking emails and comments in my blog.  When we reached here in Kuwait few weeks ago, I was welcomed by cough and colds so I went directly to the clinic to have medications.  I returned to office last week and there I welcomed by many documents in my desk, many tasks to do! 😦 So I really had no time to update my blog.

This recipe was saved in my computer for a long period of time which I cooked few months ago.  I ordered this kind of dish in one Chinese restaurant near our office and my husband said it was really delicious, hence I decided to cook similar at home, I was glad that I made it even not perfect. 

Ingredients:
500 g beef, sliced thinly
1 clove garlic, minced
1 medium onion, minced
3 cups water
1 carrot, thinly sliced
1 green bell pepper, sliced into strips
2 tbsp. tomato ketchup
soy sauce to taste
1 tsp. sugar
salt and pepper to taste
2 tbsp. cooking oil
1/4 cup fresh ginger strips

Directions:
1. Heat oil in a pan. Saute garlic and onion for few seconds, add beef, stir until color changes. Add water, let it boil. Lower the heat and cook until tender or all liquids are almost absorbed.
2. Add all ingredients excect ginger. Cook until carrots are tender.
3. Remove from heat and add the ginger strips. Mix well and serve.

Beef Adobo

This is my own way to cook beef adobo, I marinated the meat first to taste more yummy!

Ingredients:
500 g beef sirloin steaks, sliced into small cubes
3 cloves garlic, crushed
1/3 cup soy sauce
¼ cup white vinegar
2 pcs, bay leaves
1 tbsp. whole peppercorns
1 tsp. sugar
1 cup water
2 tbsp. Oyster sauce
3 tbsp. cooking oil

Directions:
1. Combine the first 7 ingredients in a medium pot, let stand for at least one hour in a refrigerator.
2. Bring mixture to a boil, add 1 cup water and simmer until liquids are almost absorbed. Turn off heat and spoon out the garlic from the beef mixture.
3. Heat cooking oil in a pan, sauté garlic until slightly brown, then add the cooked beef stirring until browned on all sided.
4. Add oyster sauce, mix well to coat all the meat. Turn off heat and serve over plain jasmine rice.

Simple Beef Stew

This is one my simplest way to cook beef stew. No vegetables were added since we like the soup to be naturally beefy in taste. Very simple and easy to make, all ingredient are always available at home.

Ingredients:
500 g beef short ribs or shanks, cut into serving size
¼ tsp. turmeric powder
3 cloves garlic, crushed
1 medium onion, thinly sliced
2 thumb-sized ginger, crushed
1 ripe tomato, thinly sliced
6-7 cups water
1 tsp. whole peppercorns
2 tbsp. light soy sauce
Salt to taste
3 tbsp. cooking oil
1 stalk of green onion, cut into 1.5 inches length

Directions:
1. Combine turmeric powder and sliced beef, mix thoroughly.
2. Heat oil in a medium pot, sauté garlic, onion, ginger and tomatoes together until smooth.
3. Add beef, stir to mix with the spices.
4. Add water and peppercorns. Lower the heat, cover the pot and simmer for 1 hour or until beef are tender.
5. Season with light soy sauce and salt. Garnish with green onions. That’s it!

Beef Taco

I never tried to make Taco dish before, I wonder why? We were on grocery section of City Centre three nights ago with my hubby and we passed by at the Mexican foods stand, the boxes of taco shells were neatly arranged in front so it was very easy for me to take a glance on it. While I was looking at the products my hubby said “hon why don’t you try to make one at home?”, so I grabbed one taco shell box and put it in our cart.

I have no time to cook few days ago hence I just made it last night. We don’t have taco sauce at home so I just served it with sweet chili sauce and it was yummy. I regret that I did not able to take a clearer picture, we were hungry last night and moreover, my little Azhfaar was disturbing me, he wanted to place his little finger on the plate so that it will appear in the picture. lol 🙂

Ingredients:
6 taco shells
250 g cup ground beef
1 medium onion, minced
1 tsp. minced garlic
3 tbsp. soy sauce
pepper to taste
1 large tomato, chopped
1 cup finely cut or chopped lettuce leaves
1 cup grated cheese ( I used cheddar)
taco sauce or any of your favorite sauce

Directions:
1. Heat non-stick pan and heat ground beef until brown. Drain.
2. Add garlic, onion, soy sauce and pepper. Stir to mix well and cook until dry. Remove from heat.
3. Bake taco shells in preheated 200 degrees oven for 5 minutes.
4. Scoop 1 tbsp. from the ground beef mixture and place it inside the taco shells. Top with chopped tomatoes, lettuce leaves and cheese alternately. Repeat this procedure until all the taco shells are filled.
5. Serve with taco sauce on top.

Ground Beef with Oyster Sauce

We ran out of stock last night since the weather in Kuwait was so dusty so we just stayed at home and we did not able to buy our groceries, we had only ground beef, canned goods and frozen vegetables. I want to cook spaghetti but some of the ingredients were not also available 😦 , so what I did was to combine the canned and frozen ingredients and made this dish, I just served it with fried rice and some fish leftovers from our lunch. I thought we won’t be able to have scrumptious dinner but I was wrong, the oyster sauce in the ground beef made it.

Ingredients:
200 g ground beef
2 tbsp. light soy sauce
1 medium onion, sliced thinly
2 tbsp. crushed ginger
½ cup mushrooms, sliced
1/3 cup corn kernel
1 small green bell pepper, chopped
3 tbsp. oyster sauce
1/3 tsp. black pepper powder
3 tbsp. cooking oil
2 boiled eggs fro garnish (optional)

Directions:
1. Mix ground beef and light soy sauce, set aside for 10 minutes.
2. Heat oil in a pan, sauté onion and ginger until aromatic, then add ground beef, cook and stir until color changes.
3. Stir in vegetables and cook for 2 minutes.
4. Turn off heat and stir in the oyster sauce.
5. Garnish with slices of hard boiled eggs.

Filipino Beef Steak

 This is a classic and simple Filipino recipe for tender beef steaks.  The meat is being marinated first for at least one hour, it will taste better if marinated for whole night and best if served with plain white rice!

Ingredients:
300 g tender beef steaks
1 tsp. flour
3 tbsp. water
2 large onions, sliced into rings
4 tbsp. cooking oil

Marinade:
juice of 1 lemon
1/3 cup soy sauce
1 clove garlic, minced
1 thumb-sized ginger, crushed
1 tsp. sugar
1/4 tsp. black pepper powder

Directions:
1. Combine marinade in a shallow dish, then marinate steaks for at least one hour.  Drain and reserve the marinade for the sauce.

2. Heat 2 tbsp. oil in a pan, pan fry the marinated steaks over low flame until done.

3. When cooked, removed the steaks from pan and transfer to a serving dish.

4. Dissolve flour in water, then add to the reserved marinade.  Set aside.

5. Heat the remaining oil in a pan, saute the onions until tender, then add the flour and marinade mixture, cook for one minute. Pour over the steaks and serve immediately.

Spicy Beef

This dish was cooked almost like the Soup and Stir Fried Squid that I posted few weeks ago, the cooking procedure involved 2 parts, first part was to soften the meat and the final part was to semi stir-fry it. One thing I like in this type of cooking is we can have a soup while we were also having a taste of stir-fried dish in one.

 

Ingredients:
500 kg beef sirloin, sliced into thin strips
1/4 tsp. turmeric powder

For the Soup:
1 medium onion, sliced thinly
1 tbsp. grated ginger
1 small ripe tomato, sliced thinly
1 tsp. whole peppercorns
3 tbsp. cooking oil
salt to taste
5 cups water

For semi stir-fry:
3 cloves garlic, crushed
1 medium onion, sliced thinly
1 medium tomato, sliced thinly
1 small bell pepper, sliced into strips
1/3 cup mixed vegetables (optional)
1/4 cup soy sauce
3 tbsp. oyster sauce
2 tbsp. tomato ketchup
2 tbsp. cooking oil

Directions:
For the Soup:
1. Mix turmeric powder and meat.
2. Heat oil in a pot, saute onions, ginger and tomatoes until tender.
3. Add meat and peppercorns, stir for few minutes.
4. Add water, let it boil, remove scums as it rises, cover the pot, lower the heat and simmer for 1 hour or until tender.
5. Season with salt.
6. Take out the whole meat from the broth. Reserve the soup.

To stir fry:
1. Heat oil in a pan, add the drained meat and stir fry for few seconds, add garlic, onions and tomatoes. Mix thoroughly, stir until the spices are tender.
2. Add all the remaining ingredients except oyster sauce. Mix well and stir for 1-2 minutes.
3. Turn off heat. Drizzle with oyster sauce. Transfer to a platter and serve. Now you have stir-fried beef and soup.
