Easy Carrot Salad

This is one of my simplest and healthiest carrot salad ever. I usually served it as a side dish to any fried or grilled meat and seafoods.  So yummy…I’m addicted to carrots!

Ingredients:
1 large carrot, sliced into tiny strips
1 tbsp. salt
1 small onion, chopped
Juice of 1 lemon

Direction:
1. Sprinkle salt over the carrots, squeeze it with your hand 2-3 times. Rinse with cold water. Drain.
2. Add chopped onion and lemon juice. Mix well. Chill for at least 20 minutes before serving.
