Zucchini with Egg

How do you eat zucchini? Normally zucchinis are included in salad, cakes, frittata or mix with other vegetables for stir frying, but ever since I tried eating zucchini with egg, I always made sure that it will be included in my list of vegetables to buy because aside from its taste I found it very easy, simple and quick to prepare and cook. This is great to cook when you’re in hurry!

Ingredients:
3-4 medium zucchinis, peeled and thinly sliced
2 cloves garlic, minced
1 medium onion, thinly sliced
1 ripe tomato, chopped
1 thumb-sized ginger, minced
Fish sauce to taste
Pepper
2 eggs, beaten
3 tbsp. cooking oil

Directions:
1. Heat oil in medium pan, sauté garlic until golden brown, add onions, ginger and tomatoes and sauté until tender.
2. Add zucchini and fish sauce, stir and cook until almost tender.
3. Add beaten eggs, stir to mix well with the vegetable. Add pepper, cook for 2 minutes.
