Fried Eggplant

Fried eggplant in olive oil then seasoned with mixture of soy sauce and lemon juice with some spices.

1 large eggplant, thinly sliced lengthwise
1 onion, minced
1 ripe tomato, chopped
3 tbsp. soy sauce
1 tbsp. lemon juice
2 tbsp. olive oil

1. Heat olive oil in a pan, fry the eggplants by batch until slightly brown. Transfer to a serving dish.
2. Combine the rest of the ingredients, pour the mixture over the fried eggplant. Serve.
