Tuna Adobo in Coco cream

Whenever we go to buy groceries, we always buy Tuna, sometimes I forgot it but my hubby didn’t. He always remember it because he really likes tuna a lot. We used it in many ways, like for salads, sandwich, fried rice, side dishes,etc. Here’s one of my hubby’s favorite tuna recipe:

1 large can tuna flakes in oil
2 tbsp. vinegar
2 tbsp. soy sauce
1 tsp. garlic powder
2 tablespoons frsh garlic, minced
1 small onions, sliced
10 pcs. peppercorns, cracked
1 piece bayleaf
½ cup thick coconut cream
1 tbsp. cooking oil

1. Marinate tuna in vinegar, soy sauce, garlic powder, peppercorns and bayleaf. Marinate for 30 minutes. Drain and reserve marinade.
2. Heat oil in a skillet and brown the fresh garlic, then add onions, stir.
3. Add tuna and cook for a minute.
4. Add in the marinade and let cook for 5 minutes uncovered. Do not stir.
5. Pour in the coconut cream and let cook for 2 minutes.
